Nexarion Sky opened on the seventy-eighth floor of Solstice Tower in 2019. It has since become a quiet institution — a place where seasoned diners return not for spectacle, but for the specific silence that arrives with the first pour.

Trained at Arpège and Noma, Amara built Nexarion's kitchen around a single question: what would you serve if the horizon were on the plate? Her nine-movement tasting menu changes with each equinox and is scored, always, to the specific light of the room at 20:00.

She has been named to La Liste's global top ten for three consecutive years.
